Ingredients

To make an authentic Ukrainian Borscht, you will need the following halal ingredients:

  • 3 medium beets, peeled and grated
  • 4 tablespoons olive oil
  • 8 cups vegetable broth (or chicken broth)
  • 3 medium potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 2 celery ribs, chopped
  • 1 small onion, chopped
  • 4 tablespoons tomato paste
  • 1 can white beans (with juice)
  • 2 bay leaves
  • 3 tablespoons white vinegar
  • Salt and pepper to taste
  • 1 garlic clove, minced
  • 3 tablespoons fresh dill, chopped

Instructions

Follow these steps to make your own delicious Borscht:

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the grated beets and cook for 10 minutes, stirring occasionally.
  2. Add the remaining olive oil, onions, carrots, and celery. Cook until the vegetables are tender, about 10 minutes.
  3. Pour in the vegetable broth and bring to a boil. Add the potatoes, tomato paste, white beans, bay leaves, and vinegar. Season with salt and pepper.
  4. Reduce the heat and simmer for 30 minutes, or until the vegetables are cooked through.
  5. Stir in the minced garlic and fresh dill. Adjust seasoning if necessary.
  6. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
