Harira is a traditional Moroccan soup that is usually consumed to break the fast. Although popularly cooked during Ramadan to break the fast, this food is also widely consumed on weekdays.
The cooking process of Harira is sufficient, which is about two hours 45 minutes or almost three hours. You can add seasonings such as salt, pepper, or mint leaves and cinnamon to add flavor to the harira soup, according to your taste.
Harira is usually served with homemade bread and honey. While in Algeria, this soup is also served with a slice of lemon. You can also eat it with rice.
The ingredients used in harira usually vary depending on each region. However, if you are interested in making it, you can use some of the materials below:
Halal Recipe for Harira
Material:
- ½ kilogram of meat (lamb, goat or chicken), diced.
- 6 large tomatoes, skin removed and juiced.
- ¾Handful of dried lentils 2-3 tbsp dried lentils, cleaned
- 2-3 tbsp rice
- 1 cup or a cup of flour
- 3 tbsp vegetable oil
- ¾ cup mashed celery
- 1 tsp turmeric
- 1½ tsp black pepper
- 1 tsp cinnamon powder
- ¼ tsp chili powder
- ¼ tsp cayenne pepper
- 1 piece of garlic
- 1 red onion
- ½ cup coriander
Preparation:
Approximately 40 minutes long
1. Peel the peas and lentils.
2. Peel the tomatoes and blend.
3. Prepare all the ingredients.
4. For the meat can be cooked medium, just a few minutes until browned.
5. Mix all the spices, starting from vegetable oil, celery, turmeric, black pepper, cinnamon, chili powder, and cayenne pepper. Stir in the mixture of three cups of water.
Heat medium for 20-30 minutes.
How to cook Harira:
Duration 1 hour 30 minutes
1. Soup: Add all ingredients, lentils, tomatoes and two liters of water.
2. Add the meat and seasoning mixture.
3. Add additional rice according to taste.
4. To thicken the soup, add a glass of flour with two cups of water. Stir until all ingredients are combined.
5. If it feels less, add salt or black pepper.
6. Harira soup is ready to be served.
7. Alternatively, add a lemon wedge and accompany it with white rice.
