Qofte is a family of meatball or meatloaf dishes found in the Indian subcontinent, South Caucasian, Middle Eastern, Balkan, and Central Asian cuisines. In the simplest form, Qoftes consist of balls of ground meat - usually beef, chicken, lamb or mutton, or a mixture - mixed with spices or onions
In Albania, Qofte can look very different from restaurant to restaurant. Sometimes they are grilled, others they are fried and sometimes they come baked, with tomato sauce. Even the shape varies, more rounded at times or more cylindrical others.
Unlike in other countries in the Middle East, Albanian Qofte is not served on a flatbread but usually with vegetables or salad. Yogurt with cucumber and fennel may also accompany.
Halal Recipe for Qofte Meatball
Ingredients :
- 400 g of ground beef
- 200 g lamb mince
- 100 g Feta
- 150 g of bread (fresh)
- q.s. flour
- 1 Onion
- 1 clove Garlic
- 2 tsp Mint
- q.s. Salt
- q.s. Pepper
- Half a teaspoon Cumin
- q.s. Peanut oil
How to make Qofte:
Preparation
Start by preparing all the ingredients. Chop the feta, onion and garlic.
Mix well together the minced meat, the breadcrumbs, the feta cheese, the salt, the pepper, the onion, the garlic, the cumin and the mint.
In a bowl, combine minced meat, salt, sparkling water and garlic (that you have crushed before). Leave the mixture in the fridge for several hours, ideally overnight.
With this dough, form meatballs about one cm high and 2.5-3 cm wide. Pass them in flour, then fry them in plenty of hot seed oil, until they are golden brown.
Serve hot, great with a cool yogurt sauce.
