 Beshbarmak (Kyrgyz: бешбармак — "five finger") is a dish from Central Asian cuisine. Beshbarmak is usually made from finely chopped boiled meat with noodles and often served with chyk, an onion sauce. It is typically served on large communal platters, shared between several people, after shorpo, which is a first course of mutton broth served in bowls called kese.[citation needed] It is also followed by a broth called ak-serke (shorpo mixed with kymyz or ayran), which is thought to help with settling the stomach. Festive beshbarmak can be cooked together with kazy and chuchuk. 

Traditionally, horse meat of the best varieties is used for cooking. Some time later, the meat was replaced with other types of meat, for example, lamb, beef, camel. But today you can find beshbarmak recipes using chicken. Because, poultry meat is much cheaper than other types of meat.

Halal Recipe for Beshbarmak

Ingredients :

  •     Chicken - medium size;
  •     Vegetable oil 2.5 tbsp. l;
  •     Onions - 3 pcs .;
  •     Water - 75 ml;
  •     Eggs - 2 pcs .;
  •     Flour - 2 tbsp.
  •     Salt, pepper, spices - to taste.
  •     Green - for decoration.

How to Make Beshbarmak

  1. The dough will be more pliable and pliable if you use cold water to prepare it.
  2. It's easier to eat a cooked dish if pancakes are made rather than noodles. For this, the dough is rolled into sausages and cut into small pieces, from which pancakes are formed. Before serving, put the filling in the center and wrap it in an envelope.
  3. The dish will turn out to be more food if you disassemble and remove all excess fat and tail. Thus, the broth will be less oily and rich.
  4. Boil noodles in chunks. Thus, they do not stick together.
  5. This dish can be improved by adding new ingredients combined with chicken. For example, tomatoes and peppers. Vegetables cooked with onions.
  6. There are several options for serving food. In the first case, noodles and stuffing are placed on a plate, and the broth is served separately. In the second case, put everything in a deep bowl and fill with broth.
