Tagine (re: tajin) is a typical Moroccan dish. Usually use saffron (curcumin) as a spice and apricot for the mixture. The pan is also unique, a kind of large earthen bowl with a conical lid. Usually tagines are made of ceramic or clay.
Cooking using tagine will give the dish an earthy taste and aroma. However, if you don't have a tagine, you can still use a regular pot that you have at home. One thing you should pay attention to, you should use a slightly thick pan so it doesn't burn easily.
This dish also has a very strong aroma due to the mixture of spices typical of the Middle East.
Halal Recipe for Moroccan Tagine
Moroccan Tagine Ingredients:
- 2 tbsp olive oil
- 1 onion (chopped)
- 2 carrots (cut into small pieces)
- 500g mutton leg (cut into cubes)
- 2 large garlic cloves (crushed)
- 1/2 tsp cumin
- 1/2 tsp ginger powder
- 1/4 tsp Moroccan saffron
- 1 tsp cinnamon powder
- 1 tbsp honey
- 100g apricot raisins (cut in half)
- 1 small cubic vegatable stock
- 1 small pumpkin (peeled and cut into small cubes)
Ingredients for the Moroccan Tagine:
- Several bowls of couscous (cook)
- Parsley (coarsely chopped)
- roasted pine nuts/ cashews
How to make Moroccan Tagine:
- Heat olive oil in a saucepan.
- Add the onions and carrots and cook for four minutes until soft.
- Put back the mutton pieces and cook until brown.
- Pour in the garlic and other seasonings and cook until it smells good.
- Add honey and apricot raisins, then add vegetable stock and 500 ml of water.
- Stir and return to cooking over medium heat for 1 minute with the lid on.
- After cooking, remove the lid from the pan and continue cooking for 30 minutes.
- Add pumpkin, cook until pumpkin is soft for another 20 minutes.
- Then cook your couscous according to the method provided in the package you purchased.
- Serve Tagine with a plate of couscous, sprinkle parsley and cashews on top.
