Ukrainian Golubsti
Cabbage rolls or golubtsi are another delicious traditional dish in Ukraine. There are two ways how these cabbage rolls are made in Ukraine: baked or boiled.
When making this authentic Ukrainian dish at home, you can choose the cabbage rolls filled with minced meat, grilled or boiled according to your taste. Golubtsi is usually added with a little sour cream on top when serving.
There are also some recipes that use mushrooms or other vegetables, but the original recipe only contains meat and grains.
The prepared ingredients are wrapped in fresh or pickled cabbage leaves, then freshly baked, boiled, or steamed in a covered pot.

Ukrainian Golubsti Ingridients
For approx 3-4 servings.
- 1 large white cabbage
- 500 gr minced meat (beef or lamb)
- 300 gr rice or barley
- 2 carrots
- 3 tomatoes
- 1/2 liter water
- Salt and pepper to taste
- 1 cup fresh sour cream
How to Make Ukranian Golubsti
Boil the whole cob in salted water for 20 minutes.
- Boil rice (or barley) in salted water until close to cooked.
- Grate the carrots and finely chop the tomatoes.
- Mix the rice with minced meat, carrots and tomatoes, and add salt and pepper to taste.
- Peel the cabbage leaves and place the inside side to cool for a few minutes. Take a tablespoon of the prepared meat into the center of each leaf, and roll it to make an envelope around the filling.
- Place the stuffed cabbage in a saucepan or other container. Add the tomato sauce and water to the saucepan, cover and let it steam for about 30-40 minutes. You can also bake it over 250F for about 45-50 minutes.
- Remove from heat and let sit for the sauce to infuse. Serve warm with a dollop of fresh sour cream.
