Egyptian Falafel
Falafel is a very famous Egyptian dish. Like ful, falafel is made from kava beans that are soaked overnight to soften them. Then, these nuts are crushed in a food processor, mixed with the garlic, scallions, chopped cilantro, and parsley.
Next, it is mixed with spices such as cumin, coriander, salt, pepper, cayenne pepper, paprika and chickpea flour. Mix all the ingredients together and form into a round, then fry! Usually, falafel is served with ful, pita bread, eggs and cheese.

Ingredients

- 1 cups (10 ounces) skinless dry fava beans (see Tips), soaked overnight
- cup chopped fresh coriander
- cup chopped fresh parsley
- 2 tablespoons chopped yellow onion
- 1 large clove garlic
- 1 teaspoon coriander seeds plus 6 tablespoons, divided
- 1 teaspoon salt
- 5 tablespoons of sesame seeds
- 6 cups canola oil
Tahini Sauce
- cup tahini
- glass of water
- 1 tablespoons white wine vinegar
- teaspoon cumin powder
- teaspoon salt

Step 1
To prepare the taameya: Drain the fava beans. Combine cilantro, parsley, onion and garlic in a food processor. Process, scrubbing the sides as needed, until very finely chopped, about 1 minute. Add fava beans and continue processing until a paste forms, about 3 minutes. Add 1 teaspoon of coriander seeds and salt; process for 1 more minute.
Step 2
Mash the remaining 6 tablespoons of coriander seeds in a mortar and pestle until they break apart. Stir in the sesame seeds and transfer to a plate.
Step 3
Heat the oil in a large saucepan over medium heat to 350 degrees F. Cover a baking sheet with plastic wrap.
Step 4
Meanwhile, using 2 tablespoons each, form the fava bean mixture into 24 discs 1 1/2 inches wide. Slightly press both sides of the disc into the seed mixture and place in the prepared pan.
Step 5
In batches, carefully dip the discs into the hot oil and cook, turning once, until golden brown, about 4 minutes. Transfer the taameya to a baking sheet lined with paper towels.
Step 6
To prepare the sauce: Whisk the tahini, water, vinegar, cumin and salt in a small bowl. Serve the taameya with the sauce.
